Ingredients
  

Blue base

  • 1 oz blue curaçao syrup (non-alcoholic) For color and orange flavor
  • 1 oz pineapple juice
  • 1 oz orange juice
  • 1 oz coconut cream Use cream of coconut or canned coconut cream
  • Ice

Foam topping

  • 1 pasteurized egg white Or 2 tablespoons pasteurized liquid egg white
  • 1/2 teaspoon sugar To help stabilize the foam
  • A few drops vanilla or alcohol-free coconut flavouring Optional

Vegan option

  • 2 tablespoons aquafaba Chickpea liquid instead of egg white

Garnish ideas

  • Toasted coconut flakes
  • Lime wheel
  • Extra coconut flakes For a snowy finish

Instructions
 

Preparation

  • Fill a cocktail shaker halfway with ice.
  • Add blue curaçao syrup, pineapple juice, orange juice, and coconut cream.
  • Shake vigorously for 10 to 15 seconds until well chilled.
  • Double-strain into a chilled coupe or martini glass to create a smooth surface.
  • In a separate clean shaker or bowl, combine egg white (or aquafaba), sugar, and optional flavoring.
  • Dry-shake hard for about 20 seconds, then add a small amount of ice and shake briefly to chill.
  • Gently spoon the foam over the drink.
  • Garnish with toasted coconut or a lime wheel and serve immediately.

Notes

For a thicker coconut layer, whisk coconut cream with a small splash of simple syrup before topping. For less sweetness, slightly reduce coconut cream and increase citrus juice. Aquafaba is a safe vegan alternative.
