Cooking the Soup
In a large pot, heat some oil over medium heat. Sauté the diced jalapeños, chopped onion, and minced garlic until they soften.
Pour in the chicken or vegetable broth and bring it to a boil.
Reduce the heat to low, and stir in the cream cheese until it’s melted and well incorporated.
Gradually add the heavy cream and shredded cheddar cheese, stirring until everything is melted and the soup is rich and creamy.
Season with salt and pepper to taste.
Serve hot, garnished with crispy turkey bacon, chopped green onions, and additional cheese if desired.
