Ingredients

For the Toast

  • 2 slices thick slices sourdough or brioche Use sturdy, slightly tangy sourdough or soft brioche.
  • 1 cup fresh mozzarella, shredded Or small bocconcini torn apart.
  • 2 tbsp mayonnaise Japanese kewpie works well for creaminess.
  • 1 tbsp teriyaki sauce Reduced-sodium if preferred.
  • 2 tbsp sliced green onions
  • 1/2 cup assorted veggies Diced bell peppers, sliced mushrooms, and sweet corn are ideal.
  • 1 tsp seaweed flakes (nori) For finishing.

Instructions

Preparation

  • Preheat the oven to 375°F (190°C). Line a baking tray with parchment paper.
  • In a small bowl, whisk the mayonnaise and teriyaki sauce until smooth and evenly combined.
  • Lay the bread slices on the prepared tray. Generously spread the teriyaki-mayo mixture over each slice, right to the edges.
  • Sprinkle an even layer of shredded mozzarella across each slice.
  • Scatter the assorted veggies over the cheese, leaving some cheese exposed so it melts and browns.

Cooking

  • Bake for 10–15 minutes, watching for bubbly, slightly golden cheese and crisping edges.
  • Remove from the oven and top with sliced green onions and seaweed flakes. Serve immediately while hot.

Notes

For a more blistered top, turn the oven to broil for the last 1–2 minutes, watching closely to avoid burning. Store leftovers in an airtight container in the fridge for up to 2 days. Reheat to restore texture.
