Ingredients

Main ingredients

  • 1 lb Cajun beef sausage, sliced (smoked, fully cooked turkey kielbasa or chicken andouille work great)
  • 1 small head cabbage, chopped (green or savoy; you can use pre-shredded to save time)
  • 1 cup heavy cream substitute: half-and-half + 2 tbsp cream cheese for slightly lighter texture
  • 1 cup Parmesan cheese, grated Parmigiano-Reggiano gives the best nutty flavor
  • 2 cloves garlic, minced use 1 tsp garlic powder in a pinch
  • 2 tablespoons olive oil or avocado oil for higher smoke point
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

Cooking

  • Heat a large skillet over medium heat and add 2 tablespoons olive oil. Swirl to coat.
  • Add the sliced Cajun beef sausage in a single layer. Cook, stirring occasionally, until browned and caramelized — about 4–6 minutes.
  • Push the beef sausage to the side and add the minced garlic. Cook 30–60 seconds until fragrant; don’t let it burn.
  • Add the chopped cabbage. Sauté, stirring every couple of minutes, until it’s tender and slightly wilted, roughly 6–8 minutes.
  • Pour in 1 cup heavy cream and stir to combine with the beef sausage and cabbage. Let it simmer gently for 1–2 minutes.
  • Reduce heat to low. Gradually sprinkle in 1 cup grated Parmesan, stirring continuously until it melts and the sauce thickens to your liking.
  • Taste and season with salt and freshly ground black pepper. Remember the beef sausage is already seasoned, so start light.
  • Serve immediately, topped with chopped parsley for freshness.

Notes

For a dairy-free swap, try canned coconut cream and a nutritional yeast blend. Store in the refrigerator for 3-4 days in an airtight container, and gently reheat with a splash of cream or water. Do not leave leftovers at room temperature for more than two hours.
