Ingredients

  • 4 ounces cream cheese Use dairy-free cream cheese for lactose-free.
  • 1/4 cup heavy whipping cream Coconut cream is a low-carb alternative.
  • 1 cup shredded cheddar cheese Sharp cheddar gives more flavor.

Beef Filling

  • 1 pound ground beef Can be swapped with ground chicken or turkey.
  • 2 tablespoons taco seasoning Use homemade or low-sodium to reduce sodium.
  • 1 tablespoon olive oil Any neutral oil will do for searing.

Crunchwrap Assembly

  • 4 low-carb tortillas Mission Carb Balance, almond-flour wraps, or other low-carb brands
  • 1 cup sour cream Substitute plain Greek yogurt for a tangier, higher-protein option.
  • 1 cup shredded lettuce Iceberg or romaine hold up best.
  • 1 medium tomato Or replace with diced bell pepper, or omit for fewer carbs.
  • 1 cup extra cheddar cheese Or mix in pepper jack for heat.
  • 1/4 cup cilantro Parsley works if you’re not a cilantro fan.
  • 1/2 cup jalapeño slices Optional for spice.

Instructions

Cheese Sauce Preparation

  • In a small saucepan over low heat, melt the butter.
  • Add cream cheese and whisk until softened.
  • Pour in heavy whipping cream and stir until smooth.
  • Add shredded cheddar and whisk until fully melted and glossy. Keep warm on the lowest heat.

Beef Cooking

  • Heat olive oil in a skillet over medium-high heat.
  • Add ground beef and break up with a spatula. Cook until browned and no longer pink.
  • Sprinkle taco seasoning over the beef with water. Stir and simmer until seasoning clings to meat.
  • Remove from heat.

Tortillas Crisping

  • Heat a dry skillet over medium heat.
  • Warm each tortilla until pliable with golden spots.
  • Optionally, brush each tortilla with oil and crisp for extra sturdiness.

Crunchwrap Assembly

  • Lay one warmed tortilla flat. Spoon cheese sauce into the center.
  • Add a portion of the seasoned beef on top of the sauce.
  • Layer with shredded lettuce, diced tomato, extra cheddar, cilantro, and jalapeños, then top with sour cream.
  • Fold the tortilla edges up and over the filling to seal.

Crunchwrap Cooking

  • Heat skillet and add butter or oil.
  • Place the folded crunchwrap seam-side down and cook until golden and crisp.
  • Flip and cook the other side until equally golden and cheese melts.

Serving

  • Let crunchwrap rest before slicing in half.
  • Serve with extra sour cream, jalapeños, or hot sauce.

Notes
