  • 1 lb chicken breast, cubed Ensure it's fresh or fully thawed if using frozen.
  • 1/2 cup orange juice (sugar-free if possible) Freshly squeezed is preferred for the best flavor.
  • 1 tablespoon soy sauce (or tamari for gluten-free) Soy sauce adds a savory flavor.
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon grated ginger
  • 1 tablespoon erythritol (or another keto-friendly sweetener)
  • Salt and pepper to taste
  • Chopped green onions for garnish

Preparation

  • In a bowl, combine the orange juice, soy sauce, rice vinegar, sesame oil, garlic powder, ginger, and erythritol. Stir well until blended.

Cooking

  • Heat a skillet over medium-high heat and add the cubed chicken. Cook until the chicken is golden brown on all sides.
  • Pour your prepared orange sauce over the chicken and stir to coat evenly.
  • Reduce the heat and let it simmer for about 5-7 minutes until the sauce thickens slightly.
  • Season with salt and pepper to taste.
  • Garnish with chopped green onions and serve immediately.

Notes

To keep leftovers fresh, store in an airtight container in the refrigerator for up to 3 days or freeze for up to a month.
