Ingredients
  

For the Tortillas

  • 1 1/3 cups almond flour Ground almonds, low-carb option
  • 2 tablespoons unflavored protein powder Adds protein to the tortillas
  • 1 tablespoon xanthan gum Used as a thickener and stabilizer
  • 1/2 teaspoon salt Enhances flavor
  • 6 tablespoons hot water Helps form the dough
  • 1/2 inch avocado oil For frying the tortillas

Instructions
 

Preparation

  • Whisk together the almond flour, protein powder, xanthan gum, and salt in a medium bowl.
  • Gradually pour in the hot water and mix with a fork until the dough comes together.
  • Divide the dough into 8 balls, each about 2 inches in diameter.
  • Place each ball between two circles of parchment paper and flatten them into 6-inch circles using your tortilla press or rolling pin.

Cooking

  • Heat about 1/2 inch of avocado oil in a skillet over medium heat.
  • Add one tortilla at a time, allowing it to cook for about a minute.
  • Using two spatulas, fold the tortilla into a taco shape and fry until golden brown, then flip to brown the other side.
  • Remove from the oil and drain on paper towels.
  • Fill your tacos with your favorite toppings like ground beef, lettuce, tomato, shredded cheese, red onion, and cilantro.

Notes

Tacos can be customized with various toppings. Keep leftovers in an airtight container for up to three days. Reheat in a skillet or microwave.
