Ingredients
  

Dry Ingredients

  • 1 cup Almond flour Can also use coconut flour, but adjust quantities.
  • 1/4 + 2 cup Psyllium husk powder (finely ground)
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Baking powder (gluten-free)

Wet Ingredients

  • 1 tablespoon Olive oil or coconut oil Feel free to experiment with alternative oils.
  • 3/4–1 cup Boiling water Adjust amount based on dough consistency.

Preparation

  • In a mixing bowl, combine almond flour, psyllium husk powder, salt, and baking powder.
  • Add the oil and immediately pour in boiling water. Stir quickly with a spoon until a dough forms.
  • Allow the dough to cool slightly, then knead with your hands until smooth and elastic.
  • Divide the dough into 6-8 equal balls.

Cooking

  • Place each ball between two sheets of parchment paper and roll into a thin circle.
  • Heat a dry skillet over medium heat. Cook each tortilla for 1-2 minutes per side until lightly golden.
  • Keep the tortillas covered with a clean cloth while cooling to maintain softness.

Notes

For extra savoriness, consider adding spices like cumin or chili powder to the dough. Store in an airtight container in the refrigerator for up to a week or freeze for longer storage.
