Instructions

Preparation

  • In a large bowl, whisk yogurt, lemon juice, ginger-garlic paste, turmeric, cumin, coriander, chili powder, garam masala, and 1½ tsp salt. Add the meat and coat well. Cover and refrigerate for at least 1 hour, preferably overnight.
  • Rinse basmati under cold water until water runs clear. Soak in cold water for 30 minutes, then drain.
  • Bring 5 cups of water and 1 tbsp salt to a boil in a large pot. Add the soaked rice with cloves, cardamom, cinnamon stick, and bay leaf. Cook for 6–7 minutes until rice is about 70% cooked. Drain and set aside.
  • Preheat oven to 350°F (175°C). Heat 3 tbsp ghee or oil in a large oven-safe pot over medium heat. Add thinly sliced onions and cook for 12–15 minutes until deep golden and caramelized. Remove half of the onions and reserve for garnish.

Cooking

  • Add marinated meat to the pot with the remaining onions. Sear for 5–7 minutes to develop color. Cover and simmer on low: 20–25 minutes for chicken, 35–40 minutes for lamb, until tender (add a splash of water if the pot dries).
  • Layer meat, chopped coriander, mint, raisins, and toasted nuts over the meat. Spread half the par-cooked rice evenly. Repeat with remaining herbs, raisins, nuts, and finish with remaining rice.
  • Drizzle the saffron-infused milk evenly over the top. Dot with 2 tbsp ghee or butter.
  • Cover the pot tightly with foil and lid. Bake in the preheated oven for 30–35 minutes so flavors meld and the rice finishes cooking.
  • Remove from oven and let rest for 10 minutes. Gently fluff the rice with a fork, garnish with reserved fried onions, and serve.

Notes

For cooling sides, serve with plain yogurt raita or cucumber-tomato salad. Roasted eggplant, sautéed spinach, or a simple green salad complement this biryani. Warm flatbreads or parathas are great for scooping.
