Ingredients

Base

  • 1 cup cottage cheese full-fat or low-fat based on preference
  • 1 cup almond flour provides structure without gluten
  • 2 tbsp honey natural sweetener; can swap for maple syrup
  • 1 tsp alcohol-free vanilla extract to enhance flavors
  • 1 tbsp lemon zest freshly zested for the best flavor
  • 1 pinch salt to enhance sweetness

Add-ins

  • 1 cup fresh blueberries gently folded in

Instructions

Preparation

  • Drain any excess liquid from the cottage cheese if it seems watery.
  • Chill a small tray or plate in the fridge to help the mixture firm up quicker.

Mixing the Base

  • In a mixing bowl, add cottage cheese, almond flour, honey, alcohol-free vanilla extract, lemon zest, and salt.
  • Mix gently using a spatula until you achieve a thick, scoopable mixture.
  • If the mixture is too loose, add an extra tablespoon of almond flour.

Folding Blueberries

  • Gently fold the blueberries into the mixture, aiming to keep them whole.

Chilling

  • Cover the bowl and chill the mixture in the fridge for 15-20 minutes.

Scooping and Rolling

  • Scoop tablespoon-sized portions and roll into bite-sized balls.
  • Place on a parchment-lined tray.
  • Optionally, bake at 325°F (160°C) for 8-10 minutes for a firmer texture.

Notes

Store in an airtight container in the fridge for up to 4 days. For longer storage, freeze bites for up to 2 months after flash-freezing on a tray.
