For the pudding mixture

  • 1 package lemon pudding mix
  • 2 cups milk (whole or 2%) Whole milk gives the best mouthfeel.
  • 1/2 cup powdered sugar Optional; adds sweetness.
  • 1/2 cup lemon juice Fresh is best for brightness.

For the layering

  • 1 tub (8 oz) whipped topping Use stabilized or thawed if frozen.
  • 1 cup crushed graham crackers Approximately 8-10 full crackers.
  • Fresh slices lemon For garnish.
  • Mint leaves fresh For garnish.

Preparation

  • In a mixing bowl, whisk the lemon pudding mix into 2 cups cold milk according to the package directions until smooth. Let it sit briefly until it thickens (around 3-5 minutes).
  • Stir in the powdered sugar and 1/2 cup lemon juice, adjusting to your preferred tartness.
  • Fold the whipped topping gently into the lemon pudding until uniform and airy, being careful not to overmix.

Assembly

  • In a trifle dish or large serving bowl, spread half the crushed graham crackers as the base layer.
  • Spoon half of the lemon-pudding-whipped mixture over the graham layer and smooth lightly.
  • Repeat by adding the remaining graham crackers and then the remaining lemon mixture.
  • Top with the leftover whipped topping, garnish with thin lemon slices and mint leaves.
  • Refrigerate for at least 2 hours to let layers set and flavors meld.

Notes

For a firmer lemon layer, chill the pudding briefly before folding in the whipped topping. Use cold milk for better pudding texture.
