Ingredients

For the mousse

  • ¾ cup whipping cream Make sure it's cold for better peaks.
  • 1 cup Greek yogurt (plain 2%) Can substitute with dairy-free yogurt.
  • 3 tbsp lemon juice (fresh) Adjust according to taste.
  • 1 tsp lemon zest
  • 2 tbsp maple syrup (or sweetener of choice) Honey can be used as a substitute.
  • 1 pinch salt

Instructions

Preparation

  • In a mixing bowl, whip the cream until it forms soft peaks using a hand mixer—this should take about 1-2 minutes.
  • In a separate bowl, whisk together the Greek yogurt, lemon juice, lemon zest, sweetener, and a pinch of salt. Taste the mixture and adjust sweetness or lemon intensity if desired.
  • Gently fold the whipped cream into the lemon yogurt mixture until everything is combined smoothly but airy. Avoid over-mixing!
  • Spoon the mousse into 4 small jars or glasses.
  • Chill in the refrigerator for at least 1-2 hours for the best texture.

Notes

Serve with crushed graham crackers and fresh mint leaves for added texture and presentation. Pairs well with light fruit salad or herbal tea. Store in airtight containers in the fridge for up to 3 days, or freeze for later use, noting that texture may change upon thawing.
