  • 1 cup avocado oil cooking spray For greasing
  • 2 cups almond flour
  • 0.5 cup coconut flour
  • 0.5 cup erythritol Or other sugar substitute
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground cloves
  • 0.25 cup avocado oil
  • 4 large eggs
  • 0.5 cup unsweetened almond milk
  • 1 small apple, peeled, cored, and finely diced For flavor and moisture

Preparation

  • Preheat your oven to 350 degrees F. Spray a muffin tin with cooking spray.
  • In a medium bowl, combine the almond flour, coconut flour, erythritol, baking powder, cinnamon, nutmeg, cloves, and a pinch of salt.
  • In another medium bowl, whisk together the avocado oil, eggs, and unsweetened almond milk.
  • Pour the wet ingredients into the dry ingredients and stir until well combined. Finally, fold in the diced apple.
  • Fill the muffin tins evenly and bake for 20-25 minutes, or until a fork or toothpick comes out clean.

Freezing

  • Let the muffins cool completely, then remove them from the muffin pan.
  • Arrange them in a single layer on a sheet pan and freeze for at least 2 hours.
  • Once frozen, transfer to a freezer-safe zip-top bag or wrap each muffin well in aluminum foil for individual storage.

Notes

Serve warm with Greek yogurt or almond butter. Store in an airtight container at room temperature for up to a week, or freeze for long-term storage. Thaw in the refrigerator overnight or microwave before serving.
