Ingredients

Base

  • 1 pound ground beef (80/20 for flavor)
  • 6 strips turkey bacon, diced (cook until crisp)
  • 1/2 medium onion, finely chopped (yellow or sweet)
  • 2 cloves garlic, minced

Cheesy egg custard

  • 4 large eggs
  • 1/2 cup heavy cream (for richness — don’t skimp)
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Topping

  • 2 cups shredded cheddar cheese, divided (sharp cheddar gives the best bite)

Garnish (optional)

  • Chopped green onions and diced tomatoes for brightness

Instructions

Preparation

  • Preheat your oven to 375°F (190°C). In a large skillet over medium heat, cook the diced turkey bacon until it’s crispy and golden. Scoop out the turkey bacon with a slotted spoon and leave the rendered pan drippings in the pan.
  • Add the chopped onion to the skillet and sauté until translucent (about 3–4 minutes), then add the minced garlic until fragrant (30 seconds). Toss in the ground beef and brown it until no pink remains. Drain excess grease but leave a little for flavor. Stir the cooked turkey bacon back in and let the mixture cool a few minutes.
  • In a bowl, whisk together the eggs, heavy cream, yellow mustard, Worcestershire sauce, salt, and pepper until smooth and a little frothy.
  • Spread the beef-turkey bacon mix into a greased 8x8-inch baking dish. Sprinkle 1 cup of shredded cheddar over the meat. Pour the egg mixture evenly so it sinks into the beef. Top with the remaining cup of cheddar.

Baking

  • Bake for 25–30 minutes, until the center is set and the top is bubbling and golden.
  • Let it rest for 5 minutes before serving so slices hold together.

Notes

Double the turkey bacon if you’re feeling fancy. Bake in a 9x13 inch and double ingredients if you’re feeding a crowd or want more leftovers. Swap heavy cream for half-and-half to shave a few calories, but expect slightly less custardy texture. For a keto boost, serve over steamed cauliflower or beside a crisp green salad.
