  • 5 pieces boneless, skinless chicken thighs Alternatively, chicken breasts can be used.
  • 1 tsp olive oil For sautéing.
  • 1 medium onion, thinly sliced Adds flavor and sweetness.
  • ⅓ cup lower carb BBQ sauce Provides flavor without the carbs.
  • ½ cup shredded cheese You can use any type of cheese you prefer.

Preparation

  • Heat 1 tsp of olive oil in a medium skillet over medium heat.
  • Add the thinly sliced onions and cook for 3-4 minutes, stirring occasionally, until soft and fragrant.
  • Season the chicken thighs with salt and pepper, then gently place them in the skillet with the onions.
  • Cover the skillet and cook on medium/low for 2-3 minutes.
  • Remove the lid and continue cooking until the internal temperature of the chicken reaches 165 degrees F, about 10 minutes.
  • Once cooked, use two forks to shred the chicken inside the skillet.
  • Stir in the lower carb BBQ sauce, ensuring the chicken is well-coated.
  • Top with shredded cheese, cover, and let rest for 1-2 minutes until the cheese has melted.

Notes

For a complete meal, pair with a green salad, roasted vegetables, or low-carb cauliflower rice. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
