  • 1 tsp olive oil
  • 1 medium onion, thinly sliced
  • 5 pieces boneless, skinless chicken thighs
  • ⅓ cup lower carb BBQ sauce Adjust quantity as preferred.
  • ½ cup shredded cheese Substitute with dairy-free cheese if needed.

Preparation

  • Heat the olive oil in a medium skillet over medium heat.
  • Add the sliced onions and cook for 3-4 minutes, stirring occasionally, until they are softened and slightly caramelized.
  • Season the chicken thighs with salt and pepper, then place them in the skillet with the onions.
  • Cover the skillet and cook for 2-3 minutes on medium-low heat.
  • Uncover and cook until the internal temperature of the chicken reaches 165°F (about 10 more minutes).
  • Using two forks, shred the chicken and stir in the BBQ sauce until well combined.
  • Top with the shredded cheese, cover the skillet for 1-2 minutes to allow the cheese to melt.

Notes

For additional flavor, consider marinating the chicken thighs in BBQ sauce for a few hours beforehand. Customize BBQ sauce with your favorite spices or hot sauce for extra flavor.
