Ingredients

  • 1 lb 85% lean ground beef
  • 1/2 cup diced yellow onion
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 can (8 oz) tomato sauce, no salt added
  • 2 tablespoons tomato paste
  • 1/2 cup beef broth
  • 1 tablespoon alcohol-free Worcestershire sauce
  • 1 teaspoon yellow mustard
  • 4 oz cream cheese, cubed
  • 1 lb (8) all-beef franks
  • 8 oz cheddar cheese, shredded (about 2 cups)
  • 2 green onions, sliced
  • Salt and black pepper, to taste

Instructions

  • Heat the oven to 400°F (200°C).
  • Brown the ground beef with the onion in a large skillet over medium-high heat for 8 to 10 minutes, breaking it up, until no pink remains and the beef reaches 160°F (71°C). Add the garlic for the last 30 seconds. Drain off all but 1 tablespoon of the fat.
  • Stir in the chili powder, cumin and smoked paprika and cook 30 seconds. Add the tomato sauce, tomato paste, beef broth, alcohol-free Worcestershire sauce and yellow mustard.
  • Simmer uncovered over medium-low heat for 15 minutes, stirring now and then, until thick enough to mound on a spoon.
  • Turn the heat to low, add the cream cheese and stir 2 minutes until melted and smooth. Season with salt and pepper.
  • Cut each frank in half lengthwise. Lay the pieces cut side up in a single layer in a 9x13-inch baking dish.
  • Spoon the chili over the franks and sprinkle with the cheddar.
  • Bake 15 to 18 minutes, until the cheese is melted and the edges are bubbling and the franks are 165°F (74°C) in the center. Rest 5 minutes, top with the green onions and serve.
