Ingredients

Main Ingredients

  • 2 lbs boneless, skinless chicken breasts Use breasts of similar size for even cooking.
  • 1 cup chicken broth Can substitute with low-sodium or vegetable broth.
  • 1 8 oz cream cheese, cubed Soften slightly for easier whisking.
  • 1/2 cup heavy cream Half-and-half can be used for a lighter texture, but the sauce will be thinner.
  • 1/2 cup grated Parmesan cheese Freshly grated gives the best flavor.
  • 1/4 cup sun-dried tomatoes, drained and chopped Oil-packed or rehydrated dry both work.
  • 1 tablespoon minced garlic About 3 small cloves if using fresh.
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water This slurry is to thicken the sauce.

Instructions

Preparation

  • Place the chicken breasts in the bottom of your slow cooker in a single layer.
  • In a medium bowl, whisk together chicken broth, cream cheese cubes, heavy cream, Parmesan, sun-dried tomatoes, garlic, Italian seasoning, salt, and pepper until mostly combined. It's okay if small lumps of cream cheese remain.
  • Pour the sauce mixture evenly over the chicken. Spread tomatoes and garlic so every breast gets some.

Cooking

  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken reaches 165°F and is tender.
  • Remove the breasts and shred them with two forks on a cutting board or in a bowl. Return the shredded chicken to the slow cooker and stir into the sauce.
  • Mix the cornstarch with cold water to make a smooth slurry. Stir the slurry into the sauce in the crockpot.
  • Cook on HIGH for 10–15 minutes, stirring occasionally, until the sauce thickens to your liking.

Serving

  • Serve immediately over zucchini noodles, cauliflower mash, or roasted vegetables.

Notes

For a smokier flavor, swap half the Parmesan for smoked provolone or add a pinch of smoked paprika. Use gluten-free cornstarch for a GF meal.
