Ingredients

For the marinade

  • 3 tbsp olive oil Use extra-virgin for better flavor
  • 1 large lemon (juiced) About 2 tbsp lemon juice
  • 2 tbsp fresh dill (chopped) Substitute with 1 tsp dried dill if necessary
  • 1 tsp salt To taste
  • ½ tsp black pepper To taste

Main Ingredients

  • 4 pieces boneless, skinless chicken breasts Substitute thighs for juicier meat if desired
  • 1.5-2 cups quinoa or rice (cooked) Follow package instructions
  • 1 large cucumber (seeded and diced) For crunch
  • 1-2 cups cherry tomatoes (halved)
  • ½ large red onion (thinly sliced) Soak in cold water for 10 minutes if too sharp

Instructions

Preparation

  • Whisk together the olive oil, lemon juice, dill, salt, and black pepper to make the marinade.
  • Place the chicken breasts in a zip-top bag or shallow dish and pour the marinade over them. Turn to coat and refrigerate for at least 30 minutes, up to 4 hours.

Cooking

  • Preheat the grill to medium heat (about 375–400°F).
  • Grill the chicken breasts for 5–7 minutes per side, flipping once, until an instant-read thermometer reads 165°F in the thickest part.
  • Let the chicken rest for 5 minutes.
  • While the chicken cooks, prepare the quinoa or rice according to package instructions. Fluff and keep warm.

Assembly

  • Chop the cucumber, halve the cherry tomatoes, and thinly slice the red onion.
  • Slice the rested chicken into even pieces.
  • Divide quinoa or rice among bowls, add the vegetables, top with sliced chicken, and drizzle with any reserved lemon-dill marinade or extra olive oil and lemon juice.

Notes

Best served with optional garnishes like crumbled feta, kalamata olives, or a dollop of tzatziki. Pair with a crisp green salad, warm pita, or roasted Mediterranean vegetables. Store assembled bowls for up to 3 days if dressing is kept separate.
