Ingredients
  

Dressing Ingredients

  • ¼ cup avocado oil
  • ½ whole jalapeño, sliced Adjust quantity for spice preference.
  • 1 clove garlic, minced
  • 1 tablespoon lime zest
  • 2-3 tablespoons lime juice
  • ½ teaspoon ground cumin
  • ½ teaspoon salt

Coleslaw Mix

  • 1 14 oz bag coleslaw mix Alternatively, use 1 head of cabbage, sliced.
  • ¼ medium red onion, thinly sliced
  • 1 cup chopped cilantro Substitute with parsley for a milder flavor.

Instructions
 

Prepare Dressing

  • In a small bowl, mix the avocado oil, jalapeño slices, garlic, lime zest, lime juice, ground cumin, and salt. Stir these ingredients well.
  • Let the mixture sit for 30 minutes or overnight to allow the flavors from the jalapeño to infuse into the oil.
  • Before serving, remove the jalapeños from the dressing.

Combine Ingredients

  • In a large bowl, toss the infused dressing with the coleslaw mix, red onions, and chopped cilantro.

Notes

Best enjoyed within 2-3 days as the cabbage will start to wilt. Prepare the dressing ahead of time for maximum flavor.
