Ingredients

Cheddar and Turkey Bacon Filling

  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked turkey bacon bits (about 3–4 slices cooked and chopped)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Cream Cheese and Jalapeño Filling

  • 8 oz cream cheese, softened
  • 4 jalapeños, seeded and diced (leave seeds in for more heat)

Egg Roll Assembly

  • 12 pieces egg roll wrappers
  • Vegetable oil for frying (enough to get 1–2 inches deep in a skillet)

Instructions

Filling Preparation

  • Combine shredded cheddar and turkey bacon bits in a medium bowl. Stir until distributed.
  • In a second bowl, beat the softened cream cheese with diced jalapeños, garlic powder, onion powder, salt, and pepper until smooth and evenly mixed.

Rolling the Egg Rolls

  • Lay one egg roll wrapper flat with a corner pointing toward you to form a diamond.
  • Place about 1 tablespoon of the cheddar-turkey bacon mixture in the center. Top with about 1 tablespoon of the cream cheese-jalapeño mixture.
  • Lightly brush the wrapper edges with water to help seal. Fold the bottom corner up over the filling, then the two sides in toward the center, and roll up tightly into a cylinder.
  • Seal the top corner with a dab of water and repeat until all wrappers are filled.

Frying

  • Heat 1–2 inches of vegetable oil in a large skillet over medium-high heat to 350°F (175°C).
  • Carefully add a few egg rolls to the oil, frying 2–3 minutes per side until golden brown and crispy.
  • Remove with tongs and drain on a paper towel-lined plate. Let cool a minute before serving.

Notes

These popper egg rolls are best served hot with dipping sauces like ranch, sriracha mayo, garlic aioli. They can be stored in the refrigerator for up to 3 days or frozen for up to 2 months. For crispy reheating, use an oven or air fryer instead of a microwave.
