  • 1/2 cup nonfat vanilla Greek yogurt Can substitute with plain yogurt plus honey to taste.
  • 1 tsp alcohol-free vanilla extract
  • 1/4 tsp salt
  • 8 oz low-fat Cool Whip, thawed Do not overmix when folding in.
  • 24 pieces Oreo Thins 12 for the bottom, 12 crushed for the filling and topping.

Instructions

Preparation

  • Line a 12-cup muffin tin with paper liners and place one whole Oreo Thin in the bottom of each liner. Set aside.
  • In a medium bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.
  • Add salt, vanilla, and Greek yogurt. Beat until fully combined and silky.
  • Crush 12 Oreos into coarse crumbs and pour them into the cream cheese mixture. Beat briefly to distribute.
  • Gently fold in the thawed low-fat Cool Whip until the mixture is uniform and light.
  • Evenly scoop or spoon the mixture into each lined cup, filling to just below the rim.
  • Optional: sprinkle additional crushed Oreos on top for crunch.

Freezing

  • Freeze the tray for at least 3 hours, or until firm.
  • Let sit 8–10 minutes at room temperature before serving so they soften slightly.

Notes

Best served slightly thawed for a creamy mouthfeel. Store in an airtight container in the freezer for up to 2–3 months. Do not refreeze once thawed.
