Ingredients

Pudding Base

  • ½ cup pumpkin puree
  • ¼ cup chia seeds
  • ¾ cup soy milk Can substitute with almond or coconut milk.
  • 1 tablespoon honey (or maple syrup) Use maple syrup for a vegan option.
  • 1 teaspoon alcohol-free vanilla extract
  • 1 tablespoon nut butter Experiment with different nut butters.
  • 1 teaspoon pumpkin spice

Chocolate Yogurt

  • ½ cup Greek yogurt Can replace with plant-based yogurt for a vegan option.
  • 1 tablespoon cocoa powder

Instructions

Preparation

  • In a bowl or medium container, combine the pumpkin puree, chia seeds, soy milk, honey, vanilla, nut butter, and pumpkin spice. Mix gently until everything is well incorporated.
  • Let the mixture sit in the fridge for at least 4 hours, or ideally overnight, so the chia seeds can expand and create a pudding-like texture.
  • Prepare the chocolate yogurt by mixing the Greek yogurt and cocoa powder until smooth.
  • In small jars or bowls, layer the pumpkin chia seed pudding with chocolate yogurt for a delightful presentation.
  • Serve chilled and enjoy!

Notes

For a thicker texture, let the pudding sit longer in the refrigerator. Experiment with toppings like crushed nuts, whipped coconut cream, or additional pumpkin spice.
