Ingredients

Main Ingredients

  • 1 cup creamy peanut butter Smooth or natural; if natural, stir well before measuring.
  • 1 cup granulated sugar Can use a mix of white and brown sugar for a softer chew.
  • 1 large egg Use room-temperature egg for easier incorporation.
  • 1/2 teaspoon alcohol-free vanilla extract
  • 1 cup boxed brownie mix Use your favorite—regular or gluten-free.
  • 1/4 cup chocolate chips Semi-sweet or milk chocolate.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, combine peanut butter, granulated sugar, egg, and vanilla. Stir vigorously until the mixture is glossy and smooth.
  • Add the brownie mix and chocolate chips. Fold gently until just combined—don’t overmix.
  • Drop rounded tablespoonfuls onto the prepared sheet, spacing them about 2 inches apart.

Baking

  • Bake for 10–12 minutes until the edges look set and the centers no longer jiggle.
  • Cool on the baking sheet for 5 minutes, then transfer to a wire rack to finish cooling. Serve once slightly cooled.

Notes

Store airtight at room temperature for up to 4 days. For longer storage, freeze for up to 3 months. Thaw at room temperature or warm for 8–10 seconds in the microwave.
