Ingredients

Marinade

  • 1/4 cup pineapple juice
  • 1 clove garlic, grated for flavoring
  • 2 Tbsp. low-sodium soy sauce
  • 1/2 tsp. red pepper flakes adjust for spice preference
  • 1 Tbsp. grated fresh ginger for flavoring
  • 1 Tbsp. honey
  • 1 Tbsp. toasted sesame oil

Main ingredients

  • 1 lb. sirloin, strip steak, or boneless short rib thinly sliced
  • 2 Tbsp. canola oil for cooking
  • Kosher salt to taste
  • Lettuce leaves for wrapping any variety suitable for wraps
  • Cooked sticky rice for serving
  • Scallions, red chiles, and chopped peanuts for garnish

Instructions

Preparation

  • In a medium bowl, combine the pineapple juice, grated garlic, soy sauce, red pepper flakes, fresh ginger, honey, and toasted sesame oil.
  • Thinly slice frozen meat and add it to the marinade, tossing to ensure it is fully coated. Let it marinate for 30 minutes or cover and refrigerate for up to 3 hours for deeper flavor.
  • Before cooking, remove the beef from the refrigerator and let it sit for 30 minutes to reach room temperature.

Cooking

  • Heat a large stainless steel skillet over medium-high heat and add 1 tablespoon of canola oil.
  • Transfer half of the beef mixture to the skillet, arranging it in an even layer. Season with 1/4 teaspoon of salt and cook without moving until lightly browned, about 1 minute.
  • Toss the beef and continue to cook until just cooked through and crisp at the edges, around 2 minutes. Transfer to a plate.
  • Repeat with the remaining tablespoon of oil and beef.

Serving

  • Serve immediately within lettuce leaves, accompanied by sticky rice, scallions, red chiles, and chopped peanuts if desired.

Notes

Store cooked beef and toppings separately in airtight containers in the refrigerator to prevent lettuce from wilting. Can last about 3-4 days. Reheat beef gently in a skillet over low heat or assemble wraps with fresh ingredients from storage for a cold serving.
