Ingredients

Bread

  • 2 slices slices of sturdy sandwich loaf, sourdough, country white Avoid extremely thin slices that may tear.

Cheese

  • 1 cup shredded mozzarella For stretch, use a 50/50 mix or adjust to taste.
  • 1/4 cup shredded cheddar For flavor; adjust to taste.

Filling

  • 1/4 cup beef pepperoni slices Regular or turkey beef pepperoni both work.
  • 1/4 cup thinly sliced bell peppers Red or green; sauté first if you prefer softer peppers.
  • 1/4 cup thinly sliced onions Red or yellow give a sweeter note when warmed.

Cooking fat

  • 1 tablespoon olive oil or butter For browning the bread.

Seasoning

  • 1 teaspoon Italian seasoning Adds pizza-herb flavor.

Instructions

Preparation

  • Heat a skillet over medium heat until warm but not smoking.
  • Lightly brush one side of each bread slice with olive oil or softened butter.
  • Place one slice in the skillet, oiled side down.

Assembling

  • Layer shredded mozzarella, cheddar, beef pepperoni, bell pepper slices, and onions on the bread.
  • Sprinkle with Italian seasoning.
  • Top with the second slice of bread, oiled side up.

Cooking

  • Cook until the bottom is golden brown (about 2-3 minutes), then carefully flip the sandwich.
  • Reduce heat slightly if the bread browns too fast before the cheese melts.
  • Cook the second side until golden and cheese is fully melted (another 2-3 minutes).
  • Remove, let rest 30 seconds, slice, and serve warm.

Notes

Serve hot to enjoy the cheese stretch. Add a smear of marinara for dipping for an authentic pizza feel. Store cooled leftovers in plastic wrap or an airtight container for up to 2 days.
