Ingredients

For the Sandwich

  • 2 slices slices of bread (sourdough, sandwich white, whole wheat) Choose any type of bread you prefer.
  • 2 slices slices of cheese — mozzarella for classic pizza melt or cheddar for sharper flavor (one of each) Blend of cheeses can enhance flavor.
  • 1/4 cup pizza sauce (store-bought marinara or leftover pizza sauce) Spread evenly to avoid soggy edges.
  • beef pepperoni slices (optional) Add as many as you like or replace with other toppings.
  • 1 tablespoon olive oil or butter for grilling Butter gives better browning; olive oil is lighter.

Instructions

Preparation

  • Preheat a skillet over medium heat until hot but not smoking.
  • Butter or brush olive oil on one side of each bread slice.
  • Place one slice in the skillet, butter side down.
  • Lay the cheese on the bread in an even layer so it melts uniformly.
  • Spoon the pizza sauce over the cheese, keeping it centered to avoid soggy edges. Add beef pepperoni if using.
  • Top with the remaining bread, butter side up.
  • Grill for 2–3 minutes until the bottom is golden. Flip carefully and grill another 2–3 minutes until the second side is golden and the cheese is melted.
  • Transfer to a cutting board, let rest for 30–60 seconds, then slice and serve warm.

Notes

For best results, keep the heat at medium to melt the cheese thoroughly without burning the bread. If the bread browns too fast, lower the heat and cover the pan for 20–30 seconds to help the cheese melt. Serve with a side of salad, extra pizza sauce, pickles, roasted veggies.
