Ingredients

Main Ingredients

  • 2 cups cottage cheese Use full-fat for richer flavor; low-fat works if preferred.
  • 3 large eggs
  • 1 cup shredded mozzarella cheese Fresh shredded melts best; pre-shredded may not melt as well.
  • 1/2 cup mini turkey beef pepperoni slices Reserve a few for the top.
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1 pinch salt
  • 1 pinch freshly ground black pepper

Instructions

Preparation

  • Preheat the oven to 375°F (190°C). Grease a 9×9-inch baking dish with butter or nonstick spray.
  • In a large bowl, whisk the cottage cheese and eggs together until fairly smooth and homogeneous.
  • Stir in the shredded mozzarella, most of the mini turkey beef pepperoni (save a few slices for the top), grated Parmesan, Italian seasoning, garlic powder, and a pinch of salt and pepper.
  • Pour the mixture into the prepared baking dish, smoothing the top with a spatula.
  • Arrange the reserved beef pepperoni slices on top for a pretty finish.

Baking

  • Bake for 30–35 minutes, until the center is set and the top is bubbly and golden.
  • Let the bake cool for 5–10 minutes before slicing. Serve with a side of warmed marinara sauce for dipping.

Notes

This bake is great as leftovers and reheats well. To enjoy it differently, serve it with marinara dipping sauce and a sprinkling of extra Parmesan or alongside a crisp side salad. It can also be frozen for later enjoyment.
