  • 1/2 teaspoon grated lemon zest For adding a zesty flavor.

Instructions

Preparation

  • Place the red potatoes in a large saucepan and add enough water to cover them. Bring the water to a boil.
  • Reduce the heat and let the potatoes cook, uncovered, for about 8-10 minutes. Add the green beans during the last 3 minutes of cooking.
  • Drain the potatoes and green beans, then transfer them into a bowl of ice water to stop the cooking process. Drain again and pat them dry.

Assembly

  • In a small bowl, whisk together the salad dressing, lemon zest, and pepper.
  • Divide the torn romaine among four plates, then place the potatoes, green beans, hard-boiled eggs, tuna, and tomato slices artfully on top.
  • Drizzle the prepared dressing over each plate just before serving.

Notes

To enhance flavor, consider adding toasted nuts or pairing with crusty bread or light chicken broth. Store leftovers in an airtight container, keeping dressing separate until serving.
