Ingredients

For the pickles

  • 1 lb Fresh radishes, trimmed and thinly sliced Use a mandoline for even slices.
  • 1 cup Rice vinegar (or apple cider vinegar)
  • 1 cup Water Adjust ratio if you like milder acidity.
  • 2-3 tablespoons Granulated sugar Reduce for less sweetness.
  • 1-1.5 teaspoons Kosher salt
  • to taste Optional aromatics: thinly sliced ginger, a garlic clove, a small dried chili, or a strip of kombu For added flavor.

Instructions

Preparation

  • Rinse and trim radishes. Slice them paper-thin on a mandoline or with a sharp knife.
  • Pack the radish slices into a clean jar. Tuck in any aromatics you like.

Making the Brine

  • In a small saucepan, combine rice vinegar, water, sugar, and salt. Warm over medium heat, stirring until the sugar and salt dissolve. Don’t overboil.
  • Pour the hot brine over the radishes, pressing them down so they’re fully submerged. Leave about ½ inch headspace.

Cooling and Storing

  • Let the jar cool to room temperature, then seal and refrigerate. After 1 hour they’ll be crisp and tangy; 24–48 hours yields fuller flavor.

Notes

Refrigerate the sealed jar immediately after cooling. Keep pickles below 40°F and consume within 2–3 weeks for optimal crunch. Do not freeze as it will turn radishes mushy. Use color contrasts and acidity to accentuate main dishes.
