Ingredients

For the Red Velvet Layer

  • 1/2 cup Butter (1 stick, melted) Melted butter keeps the base fudgy rather than cakey.
  • 1 cup Granulated sugar Sweetness and structure; brown sugar would add molasses notes if desired.
  • 2 large Eggs Provide lift and richness.
  • 1 teaspoon alcohol-free vanilla extract Background warmth.
  • 1 tablespoon Red food coloring Gel or liquid works; gel gives stronger color with less liquid.
  • 1 teaspoon White vinegar Brightens the cocoa and tenderizes the crumb.
  • 1/4 cup Cocoa powder (unsweetened) Gives the 'velvet' chocolate note without dominating.
  • 3/4 cup All-purpose flour Spoon and level to avoid a dry result.
  • 1/4 teaspoon Salt Balances sweetness and enhances chocolate flavor.

For the Cheesecake Swirl

  • 8 oz Cream cheese (softened) Full-fat yields the best texture and tang.
  • 1/4 cup Granulated sugar Sweetens without overpowering the tang.
  • 1 large Egg Gives stability to the swirl so it sets.
  • 1/2 teaspoon alcohol-free vanilla extract Complements the cream cheese.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment, allowing for overhang, or lightly coat with non-stick spray.
  • In a large bowl, whisk melted butter and granulated sugar until smooth and glossy.
  • Mix in eggs, alcohol-free vanilla extract, red food coloring, and white vinegar until fully combined.
  • Sift cocoa powder, all-purpose flour, and salt into the wet mixture. Fold gently until smooth and uniform. Reserve 1/4 cup of this red velvet batter for later dollops.
  • In a separate bowl, beat softened cream cheese with 1/4 cup granulated sugar until creamy and free of lumps. Add egg and alcohol-free vanilla extract; beat until smooth.

Assembly

  • Pour the main red velvet batter into the prepared pan and spread evenly.
  • Drop spoonfuls of the cream cheese mixture over the red velvet layer. Use a knife or skewer to create a marbled pattern, adding dollops of reserved red velvet batter for visual contrast.

Baking

  • Bake for 25–30 minutes, until the center is set and a toothpick inserted comes out with a few moist crumbs.
  • Let the brownies cool completely in the pan on a rack. Chill for 30–60 minutes to make slicing cleaner.
  • Lift from the pan using the parchment overhang and slice into bars.

Notes

Serve at room temperature for a soft bite or lightly chilled for firmer slices. Pair with coffee, fresh berries, or vanilla ice cream for contrast.
