Ingredients

Filling Ingredients

  • 2 cups Corned beef, chopped (about 2 cups) leftover corned beef or deli corned beef both work
  • 1 to 1.5 cups Swiss cheese, shredded Gruyère is a fine substitution
  • 1 cup Sauerkraut, well drained and squeezed dry
  • 2-3 pieces Green onions, thinly sliced adds brightness
  • 4 oz Cream cheese, softened helps bind the filling
  • 30-40 pieces Wonton wrappers depending on size
  • as needed cups Oil for frying neutral oil with a high smoke point: canola, peanut, or vegetable

Dipping Sauce

  • 0.5 cup Thousand Island dressing store-bought or homemade
  • 1 tsp Hot sauce to taste Sriracha or your favorite

Optional Ingredients

  • to taste Freshly ground black pepper
  • a pinch Smoked paprika
  • to taste Caraway seeds for a rye-like note

Instructions

Preparation

  • In a medium bowl, combine the chopped corned beef, shredded Swiss, drained sauerkraut, sliced green onions, and softened cream cheese. Mix until the ingredients are evenly combined.
  • Place one wonton wrapper on a clean surface. Spoon about 1 tablespoon of the filling into the center. Lightly moisten the wrapper edges with water, fold into a small packet (purse or triangle), and press to seal. Repeat until you've used all the filling.

Frying

  • Pour oil into a deep pan or fryer to a depth of about 2 inches. Heat over medium to medium-high heat to roughly 350-375°F.
  • Work in batches to fry the filled wontons for about 3-4 minutes, turning occasionally, until they’re evenly golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain.

Dipping Sauce

  • In a small bowl, mix the Thousand Island dressing with hot sauce to taste.

Serving

  • Arrange the Reuben Balls on a platter and serve hot with the spicy Thousand Island dipping sauce.

Notes

For a lighter version, bake at 400°F for 8-10 minutes or until golden, turning halfway. You can use turkey or pastrami instead of corned beef if preferred.
