Ingredients
  

For the Crostini

  • 1 whole whole grain hoagie or submarine roll Feel free to swap for another type such as a baguette.

For the Toppings

  • 4 oz ricotta cheese Use low-fat ricotta cheese for a lighter option if desired.
  • 0.75 cup part-skim ricotta cheese, no-sugar-added blackberry preserves
  • 0.25 cup fruit-sweetened blackberry jam
  • 0.75 cup fresh or thawed frozen blackberries Use fresh for best flavor.
  • 0.13 tsp sea salt To sprinkle on top.

Preparation

  • Using a bread knife, trim off the rounded ends of the roll and cut it into 12 slices, about 1/2 inch thick each.
  • Toast the bread slices in a toaster until golden brown.
  • Top each slice with 1 tablespoon of the ricotta cheese, followed by 1 teaspoon of the jam.
  • Evenly top with blackberries, then sprinkle with salt.
  • Arrange on a platter and serve.

Notes

These crostini can be served as is or alongside a light salad. Store ingredients separately to keep fresh.
