Ingredients

For the Sandwich

  • 2 slices slices of bread (your choice, sourdough or country loaf works best)
  • 2 tablespoons butter, softened
  • 2 slices cheddar cheese
  • 2–3 slices cream cheese (2–3 tbsp softened cream cheese)
  • 2–3 pieces roasted jalapeños, diced (remove seeds to reduce heat)
  • 1/4 cup shredded cheese (mozzarella or extra cheddar)
  • Salt and pepper to taste

Instructions

Preparation

  • Heat a skillet over medium heat so it’s ready when you finish assembling.
  • Spread butter on one side of each bread slice. The buttered sides will be the exterior.
  • On the unbuttered side of one slice, spread the cream cheese evenly, leaving a small border. Season lightly with salt and pepper.
  • Sprinkle the diced roasted jalapeños over the cream cheese.
  • Add the two slices of cheddar on top, then scatter the shredded cheese for extra melt.
  • Place the second slice of bread on top, buttered side up. Press gently to compress the sandwich.

Cooking

  • Put the sandwich in the preheated skillet. Cook 3–4 minutes on the first side until golden brown, then flip and cook another 3–4 minutes until the second side is golden and the cheeses are melted.
  • Lower the heat if the bread browns too fast before the cheese melts.
  • Remove from heat, let rest for 1 minute, slice in half, and serve warm.

Notes

For a heartier meal, serve with a side like turkey bacon Cheeseburger Pasta. Store leftover sandwich wrapped in foil or an airtight container in the refrigerator for up to 2 days. Re-heat in a skillet or toaster oven.
