Ingredients

  • 2 lbs skinless, boneless chicken (breast or thighs)
  • 4 teaspoons taco seasoning Can be substituted with other spice mixes.
  • 4 oz cream cheese, softened Can be substituted with Greek yogurt or a vegan alternative.
  • 1 can Rotel or salsa, drained 10 oz can
  • 1 cup shredded cheddar cheese

Preparation

  • Preheat your oven to 375 degrees Fahrenheit.
  • Place the chicken in a 9x13 baking dish and season both sides generously with salt and pepper.
  • Sprinkle taco seasoning on both sides of the chicken and rub it into the meat.
  • In a medium bowl, combine the softened cream cheese and drained Rotel, stirring until mixed.
  • Spread the salsa cream cheese mixture over the chicken.

Cooking

  • Bake at 375 for 30-35 minutes, ensuring that the chicken is thoroughly cooked.
  • Once done, remove from the oven and top with shredded cheddar cheese.
  • Return to the oven and bake for an additional 3-5 minutes or until the cheese is melted.

Notes

To store leftovers, place them in an airtight container in the refrigerator for up to three days. For longer storage, freeze the dish for up to two months. Marinating the chicken with taco seasoning can enhance flavor.
