Ingredients

Main Ingredients

  • 1 pound beef sausage, sliced (sub: turkey sausage or plant-based sausage) Choose pre-cooked beef sausage for quicker preparation.
  • 1 cup sweet potatoes, cubed (sub: butternut squash or regular potatoes; par-cook longer) Par-cook sweet potatoes for best results.
  • 1 cup zucchini, sliced (sub: yellow squash or bell pepper)
  • 1 cup broccoli florets
  • 2 tablespoons olive oil (sub: avocado oil)
  • 2 tablespoons soy sauce or coconut aminos Use coconut aminos for gluten-free and lower sodium.
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika

Garnish

  • grated Parmesan cheese or nutritional yeast For a dairy-free option, use nutritional yeast.

Instructions

Preparation

  • Par-cook the sweet potatoes: Boil or microwave the cubed sweet potatoes just until they’re fork-tender but not falling apart. Drain and set aside.
  • Heat the skillet: Warm 2 tablespoons of olive oil in a large skillet over medium-high heat.

Cooking

  • Brown the beef sausage: Add the sliced beef sausage to the hot skillet. Cook, stirring occasionally, until browned and slightly crisp—about 5 minutes.
  • Add the vegetables: Toss in the broccoli florets, sliced zucchini, and the cooked sweet potato cubes. Stir to combine evenly with the beef sausage.
  • Season: Drizzle in the soy sauce or coconut aminos. Sprinkle the garlic powder, black pepper, and smoked paprika over everything. Stir to incorporate.
  • Finish cooking: Keep cooking and stirring for another 5–7 minutes, until the broccoli and zucchini are tender-crisp and everything is heated through.
  • Serve hot, optionally garnished with grated Parmesan or a sprinkle of nutritional yeast.

Notes

Refrigerate leftovers in an airtight container for up to 3–4 days. For longer storage, freeze portions in airtight containers for up to 2 months. Thaw overnight in the fridge before reheating.
