Ingredients

Main Ingredients

  • 8 slices slices of bread (white or whole wheat)
  • 8 links breakfast beef sausage links
  • 4 large large eggs
  • 1/2 cup milk
  • 1 teaspoon alcohol-free vanilla extract
  • 1 teaspoon cinnamon
  • 1 tablespoon butter (for cooking)
  • Maple syrup (for serving)
  • Powdered sugar (for dusting, optional)

Instructions

Preparation

  • Cook the beef sausage links following package directions; set aside to cool slightly.
  • While beef sausages cook, remove crusts from each bread slice and flatten with a rolling pin.
  • In a shallow bowl, whisk together eggs, milk, vanilla, and cinnamon until smooth.
  • Place one beef sausage at the end of a flattened bread slice and roll tightly; secure with a toothpick if needed. Repeat for all beef sausages.

Cooking

  • Heat butter in a skillet over medium heat.
  • Dip each roll in the egg mixture so it’s fully coated.
  • Fry rolls in the skillet, turning so every side browns evenly, about 3–4 minutes total. Remove toothpicks.

Serving

  • Serve warm with maple syrup and an optional dusting of powdered sugar.

Notes

Cool completely, then place in an airtight container in the refrigerator for up to 3 days. To reheat, microwave briefly (20–40 seconds) or warm in a 350°F oven for 8–10 minutes. For freezing, cool roll-ups on a tray, then transfer to a freezer bag for up to 1 month; reheat from frozen at 375°F for 12–15 minutes. For quicker preparation, use pre-cooked beef sausage links and prepare the egg mixture ahead of time.
