Ingredients

Main Ingredients

  • 2 cups diced chicken breast about 1 lb, trimmed and cubed
  • 4 cups diced potatoes Yukon Gold or red potatoes work best
  • 4 slices turkey bacon chopped (turkey bacon for a leaner swap)
  • 1 cup dairy-free cream full-fat coconut cream or cashew cream
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Grease a medium baking dish with oil or nonstick spray.
  • Heat a large skillet over medium heat. Add the chopped turkey bacon and cook until crispy, about 6–8 minutes. Use a slotted spoon to transfer turkey bacon to a paper towel-lined plate; leave the rendered pan drippings in the skillet.
  • Add the diced onion to the hot skillet and sauté in the pan drippings until translucent, about 4 minutes. Add the minced garlic and cook for 30–60 seconds until fragrant; don’t let it brown.
  • In a large mixing bowl combine the diced chicken, potato cubes, sautéed onion and garlic, cooked turkey bacon, dairy-free cream, salt, pepper, thyme, and paprika. Stir until everything is evenly coated. If the mixture seems dry, add 2–3 tablespoons more cream or a splash of broth.
  • Transfer the mixture into the prepared baking dish and spread it into an even layer.

Baking

  • Bake uncovered for 45–50 minutes, until the potatoes are tender when pierced with a fork and the chicken reaches 165°F (74°C) internal temperature. If the top browns too quickly, tent the dish loosely with foil for the last 10–15 minutes.
  • Let the casserole rest 5–10 minutes before serving so the juices set.

Notes

For quicker cooking, use smaller potato cubes (about 1/2-inch) or parboil for 5–7 minutes before mixing. Use pre-cooked rotisserie chicken to cut stove time — just reduce the bake time slightly.
