Ingredients
  

Crust

  • 2 cups almond flour Gluten-free base
  • 1/2 cup coconut oil, melted Can substitute with unsalted butter
  • 1/4 cup honey or maple syrup Feel free to experiment with sweeteners
  • 1/4 teaspoon salt

Lemon Filling

  • 4 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon baking powder

Preparation

  • Preheat your oven to 350°F (175°C) and grease a sheet pan.
  • In a bowl, combine almond flour, melted coconut oil, honey (or maple syrup), and salt. Mix until it forms a crumbly crust.
  • Press this mixture firmly into the bottom of the prepared sheet pan to create an even layer.

Lemon Filling

  • In another bowl, whisk together the eggs, fresh lemon juice, lemon zest, and baking powder. Blend until smooth.
  • Carefully pour the lemon filling over the crust in the sheet pan.

Baking

  • Bake for 20-25 minutes, or until the filling is set, and the edges begin to turn a light golden brown.
  • Allow the lemon bars to cool completely before slicing them into squares. Serve and enjoy your delicious creation!

Notes

These bars are delightful with a dusting of powdered sugar or paired with fresh berries. Store in an airtight container in the refrigerator for up to a week or freeze for later enjoyment.
