Ingredients

Main Ingredients

  • 4 pieces boneless, skinless chicken breasts (about 1.5–2 lb) For richer flavor, swap with chicken thighs.
  • 1 cup hoisin sauce Use gluten-free hoisin or tamari if needed.
  • 1/4 cup soy sauce Low-sodium if preferred.
  • 1 tablespoon rice vinegar Apple cider vinegar works in a pinch.
  • 2 cloves garlic, minced Or 1/2 tsp garlic powder.
  • 1 tablespoon fresh ginger, minced Or 1/2 tsp ground ginger.
  • 1/2 teaspoon black pepper
  • 2 pieces green onions, sliced For garnish.

Instructions

Preparation

  • In a bowl, whisk together the hoisin, soy sauce, rice vinegar, minced garlic, minced ginger, and black pepper until smooth.
  • Place the chicken breasts in the slow cooker in a single layer and pour the sauce over the top, turning each breast to coat thoroughly.

Cooking

  • Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken reaches 165°F and is very tender.
  • Remove the lid and use two forks to shred the chicken right in the sauce so it soaks up the flavors. Stir to combine.

Serving

  • Spoon the shredded chicken and plenty of sauce over rice or noodles and sprinkle sliced green onions on top. Serve hot.

Notes

For best results, cool leftovers quickly and refrigerate. To thicken the sauce, remove a cup of sauce, whisk in 1 tsp cornstarch, and stir back into the slow cooker for 10–15 minutes.
