Ingredients

Main Ingredients

  • 4 pieces boneless, skinless chicken thighs or breasts Thighs are juicier; breasts are leaner.
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup honey Reduce for less sweetness.
  • 1/3 cup soy sauce Low sodium preferred.
  • 1/4 cup ketchup Can substitute tomato paste plus sugar.
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger (optional) Fresh is best.
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1/4 teaspoon red pepper flakes (optional) For heat.

For Thickening (Optional)

  • 1 tablespoon cornstarch
  • 2 tablespoons water To make a slurry.

Garnish

  • sesame seeds
  • chopped green onions

Instructions

Preparation

  • Season the chicken lightly with salt and black pepper on both sides.
  • In a small bowl, whisk together honey, soy sauce, ketchup, minced garlic, grated ginger (if using), vinegar, and red pepper flakes until smooth.
  • Place the chicken in the slow cooker in a single layer. Pour the sauce evenly over the top, ensuring each piece is coated.

Cooking

  • Cover and cook on low for 4–5 hours or on high for 2–3 hours, until the chicken reaches an internal temperature of 165°F (74°C) and is tender.

Optional Thickening

  • Remove the chicken and transfer the cooking liquid to a saucepan. Whisk cornstarch with water to create a slurry, then stir into the simmering sauce. Cook over medium heat for 2–3 minutes until thickened.
  • Return the chicken to the slow cooker and spoon the thickened sauce over it, or pour the glaze on top.

Serving

  • Garnish with sesame seeds and chopped green onions before serving.

Notes

For gluten-free, use tamari instead of soy sauce. Adjust sweetness and flavor by modifying the amount of honey and vinegar. Can be made ahead for intensified flavors.
