  • 7 ounces smoked salmon
  • 6 ounces arugula (rocket) leaves Can substitute with spinach.
  • 1 medium avocado Use ripe for best flavor.
  • 1 teaspoon sesame seeds Optional, can toast for extra flavor.
  • 2 tablespoons sunflower seeds Consider toasting before adding.
  • 2 tablespoons cilantro Chopped.
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 pinch salt
  • 1 pinch pepper

Instructions
 

Preparation

  • Dice the avocado and place it in a mixing bowl.
  • Add the arugula, cilantro, salt, and pepper, then gently toss until combined.
  • Drizzle the olive oil and lemon juice over the mixture and toss again to coat everything evenly.
  • Transfer the salad to a serving bowl and top it with the smoked salmon.
  • Finally, sprinkle the sesame seeds and sunflower seeds over the top. Serve and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to one day. Assemble just before serving to keep avocado fresh. For variations, consider swapping smoked salmon for grilled shrimp or adding fresh tomatoes or diced cucumber.
