Ingredients

For the stir-fry

  • 1 tablespoon light-flavor olive oil
  • 1 pound beef sausage, sliced Smoked beef sausage preferred.
  • 1 medium onion, chopped
  • 4 tablespoons water, divided
  • 4 cloves garlic, minced
  • 1 small head green cabbage, chopped
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 teaspoons apple cider vinegar

Instructions

Preparation

  • Warm your skillet over medium heat and add the olive oil.
  • Scatter in the sliced beef sausage and let it brown, stirring just enough to color each piece.
  • Once the edges deepen in color, transfer the beef sausage to a plate to hold its warmth.

Cooking

  • Place the skillet back on the stove and add the chopped onion. Let it soften slowly, stirring occasionally.
  • Add a splash of water and gently scrape the browned bits from the pan for added flavor.
  • Add the garlic, cabbage, salt, and pepper. Stir well and pour in another splash of water. Cover the pan.
  • After several minutes, check the texture of the cabbage; it should look relaxed but not wilted.
  • Return the beef sausage to the skillet and add the apple cider vinegar. Toss everything together.
  • Increase the heat for a short moment if there's extra liquid so that it can evaporate. Taste and adjust seasoning.

Notes

For a softer cabbage, cook it a few minutes longer. Consider adjusting the vinegar and seasoning based on the beef sausage's flavor. Leftovers can be stored in an airtight container and reheated gently with a splash of water.
