Ingredients

Main Ingredients

  • 3 tbsp extra virgin olive oil
  • 5 cloves garlic, minced
  • 2 medium onions, chopped
  • 1 medium yellow capsicum, cut into one inch squares
  • 1 medium red capsicum, cut into one inch squares
  • 400 grams sliced smoked beef sausage
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 3/4 tsp smoked paprika
  • 1 1/2 cups uncooked long grain white rice
  • 2 1/2 cups low sodium chicken stock
  • 2 cups thawed peas
  • 2 tbsp chopped parsley, optional For garnish

Instructions

Cooking the Sausage

  • Heat two tablespoons of oil in a heavy pot over medium high heat. Add the sliced beef sausage and let it sear until golden, then remove and set aside.

Preparing the Vegetables

  • Add the remaining tablespoon of oil to the pot. Stir in the garlic and onion, letting them soften. Add the capsicum and stir until the onions are translucent.

Cooking the Rice

  • Stir in the rice until coated, then add the stock, smoked paprika, salt, pepper, and the browned beef sausage. Mix well.
  • Bring the pot to a boil, then reduce the heat to low, cover, and let it cook for twenty minutes.

Finishing Touches

  • Turn off the heat and lift the lid quickly. Add the peas, cover again, and let rest for ten minutes.
  • Add parsley if using, fluff the rice gently with a fork, and serve.

Notes

For a stronger sear on the beef sausage, let it cook undisturbed for an extra minute. You can also add chili flakes for added heat, incorporate sliced green beans or chopped carrots with the capsicum for more flavor and color.
