Sour Cream Beef Noodle Casserole

Ingredients
  

Pasta and Meat

  • 8 oz egg noodles or any similar short pasta; cook al dente
  • 1 lb ground beef 80/20 gives good flavor; leaner beef works with olive oil
  • 1 medium onion, chopped

Sauce and Cheese

  • 2 cups sour cream full-fat for best texture; Greek yogurt can substitute
  • 1 cup shredded cheese cheddar is classic; Monterey Jack or Colby work well
  • 1 can (10.5 oz) cream of mushroom soup cream of chicken is a simple swap
  • Salt and freshly ground black pepper to taste

Garnish

  • chopped parsley optional for garnish

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease a 9x13-inch or similar baking dish.
  • Cook the egg noodles according to package directions, stopping 1–2 minutes before fully tender. Drain and set aside.
  • In a large skillet over medium heat, add ground beef and chopped onion. Cook until the beef is no longer pink and the onion is translucent, about 6–8 minutes.
  • Drain excess grease from the skillet. Return the beef mixture to low heat just to warm through.
  • In a large bowl, stir together sour cream and cream of mushroom soup until smooth. Season with salt and black pepper.

Assembly

  • Add the drained noodles and the browned beef mixture to the bowl. Fold gently until evenly coated.
  • Pour the mixture into the prepared baking dish and spread evenly with a spatula.
  • Sprinkle the shredded cheese across the top.

Baking

  • Bake for about 30 minutes, or until the cheese is melted, bubbling, and lightly golden at the edges.
  • Remove from the oven, let rest for 5 minutes, garnish with parsley if desired, and serve hot.

Notes

This casserole can be made ahead and stored in the refrigerator. Pair with a salad or green vegetables for a complete meal.
