For the Chicken Marinade

  • ¾ lb boneless, skinless chicken breasts
  • ¼ cup lime juice (about one lime)
  • ½ tsp chili powder
  • ½ tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp salt (add more as needed)
  • 3 tbsp olive oil
  • 1 tbsp chipotle pepper in adobo (see notes)

For the Wrap Assembly

  • 4 large tortillas
  • 1 cup uncooked rice
  • 1 small red bell pepper, chopped
  • 1 medium jalapeño, chopped (adjust to your heat level)
  • ½ red onion sliced
  • 3 cloves garlic, minced
  • 1 tsp olive oil (for sautéing)
  • ¾ cup corn kernels (thawed or fresh)
  • 1 cup black beans (drained and rinsed)
  • ¼ cup cotija cheese
  • ⅓ cup sour cream (see notes)
  • 1½ tbsp honey
  • ½-1 tbsp chipotle peppers in adobo (to taste)
  • 1 tbsp lime juice
  • 3 tbsp fresh cilantro, chopped
  • 1-2 tbsp water (for thinning the crema)
  • ¼ tsp salt

Instructions

Preparation

  • Pat the chicken dry and chop it into small, bite-sized pieces. Toss in a bowl with olive oil, lime juice, chili powder, onion powder, garlic powder, smoked paprika, and chipotle peppers. Mix well and let marinate for about 15 minutes.
  • Cook the rice according to package directions and keep it fluffy.
  • In a blender, combine sour cream, honey, chipotle pepper, lime juice, cilantro, and a splash of water. Blend until creamy and set aside.

Cooking

  • Heat olive oil in a large skillet over medium heat. Add marinated chicken and sauté for 12-15 minutes until fully cooked through.
  • In the same skillet, sauté chopped peppers, onions, and a little olive oil for about 8 minutes. Add minced garlic and lower the heat.

Assembly

  • Warm tortillas as per package instructions. Layer rice, chicken, sautéed veggies, black beans, corn, and cotija cheese on each tortilla. Drizzle with crema, wrap tightly, and enjoy.

Notes

Store leftovers in the fridge for about 3 days or freeze the filling separately from the tortillas. Adjust spice levels to your preference. Serve with tortilla chips and salsa for a complete meal.
