  • 2 cloves garlic, minced For the beef.
  • 2 tablespoons soy sauce For the beef.
  • 1/2 teaspoon chili flakes Adjust to taste.
  • 1 teaspoon sesame oil
  • 1 teaspoon brown sugar

For the Vegetables

  • 1 cup broccoli florets
  • 1/2 red bell pepper sliced into strips
  • 1/2 zucchini sliced
  • 1/2 cup mushrooms, sliced
  • 2 cloves garlic, minced For the vegetables.
  • 1 tablespoon olive oil For the vegetables.
  • 1 teaspoon soy sauce To finish the veggies.

For Serving

  • 1 cup steamed white rice Can substitute for brown rice for more fiber.

Instructions

Preparation

  • Wash and chop broccoli, bell pepper, zucchini, and mushrooms. Mince both portions of garlic. Measure soy sauce, sesame oil, brown sugar, and chili flakes.

Cooking the Beef

  • Heat a skillet over medium-high. Add 1 teaspoon sesame oil and the minced garlic. Sauté about 30 seconds until fragrant, being careful not to brown.
  • Add ground beef to the skillet. Break into small pieces and cook until fully browned, about 4–6 minutes.
  • Stir in soy sauce, chili flakes, and brown sugar. Let the mixture simmer for 3–4 minutes until slightly thickened and glossy. Remove from heat and cover to keep warm.

Cooking the Vegetables

  • In a separate pan, heat 1 tablespoon olive oil over medium-high. Add the minced garlic and cook for 30 seconds.
  • Add sliced mushrooms and cook for 2 minutes until they start to soften.
  • Add broccoli, zucchini, and red bell pepper. Stir-fry for 4–5 minutes until vegetables are tender-crisp.
  • Drizzle soy sauce over the veggies, toss well, and remove from heat.

Serving

  • Scoop hot steamed rice into bowls. Arrange the beef and vegetables on top or side-by-side. Spoon any extra pan sauce over the bowl for extra flavor.

Notes

Garnish with sliced scallions, toasted sesame seeds, or a drizzle of sriracha for heat. Add a soft-boiled egg or fried egg on top for extra richness and protein. Serve with quick pickled cucumbers or kimchi for brightness.
