- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 3 bell peppers, diced
- 1 cup cauliflower rice
- 4 cups beef broth
- 1 can diced tomatoes
- 2 teaspoons Italian seasoning

- 1 tablespoon olive oil
Preparation
In an Instant Pot or large pot, heat the olive oil over medium heat.
Add the diced onion and minced garlic, cooking until the onion is soft and translucent.
Stir in the ground beef, cooking until it’s nicely browned.
Add the diced bell peppers, cauliflower rice, diced tomatoes, beef broth, Italian seasoning, and season with salt and pepper. Stir everything until well combined.

If using an Instant Pot, seal the lid and set to high pressure for 10 minutes. For stovetop cooking, bring the mixture to a boil, then reduce heat and simmer for 20-30 minutes.
Ladle into bowls and enjoy!
