Main Ingredients

  • 2 pieces ripe bananas Make sure to grab ripe bananas for natural sweetness.
  • 2 cups unsweetened almond milk Can be substituted with other milk alternatives.
  • 1/4 cup erythritol or other sugar substitute Use according to taste preferences.
  • 1/4 cup cornstarch
  • 1 teaspoon alcohol-free vanilla extract
  • 1/4 teaspoon salt
  • Whipped cream (for topping) Use plant-based whipped cream for a vegan option.

Instructions

Preparation

  • In a saucepan, combine almond milk, erythritol, cornstarch, and salt over medium heat. Stir constantly until the mixture thickens.
  • Remove the saucepan from heat and stir in the alcohol-free vanilla extract.
  • Slice the bananas and layer them in a serving dish.
  • Pour the pudding mixture over the bananas, ensuring an even distribution.
  • Chill the dessert in the refrigerator for at least 2 hours to set beautifully.
  • Top with a generous dollop of whipped cream before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Bananas may brown over time, so consume sooner rather than later. Avoid freezing the pudding, as it compromises the texture.
