  • 2 cups grated carrots
  • 1 cup almond flour Can be substituted with gluten-free blend if required.
  • 1 cup unsweetened applesauce Can be substituted with mashed bananas.
  • 3/4 cup sugar-free sweetener
  • 1/2 cup chopped nuts Optional, for added crunch.
  • 3 large eggs
  • 1 tsp alcohol-free vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the grated carrots, almond flour, and sugar-free sweetener.
  • In a separate bowl, whisk together the eggs, unsweetened applesauce, and alcohol-free vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until well integrated.
  • Add baking soda, baking powder, salt, ground cinnamon, and nutmeg to the mixture, combining thoroughly.
  • If you like a bit of crunch, fold in the optional chopped nuts.
  • Transfer the batter to a greased and floured cake pan.

Baking

  • Bake for approximately 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool before serving.

Notes

To serve, consider adding a light dusting of powdered sugar or a drizzle of sugar-free icing on top. Pair with fresh fruit or a dollop of sugar-free whipped cream.
